You gotta eat your Spinach, baby!

It’s hot out and my body is telling me to keep it lean and green…So we had a completely raw dinner. Out of this world amazing! Raw foods are great for all. I’m not against cooked food either, so don’t worry. But….Raw food carries vitamins and minerals that can be lost during the heating process of cooking. Think of a simple salad, without any diary or meat on it, it’s raw. Nothing cooked or cooked beyond 115 degree Fahrenheit, is considered raw. Well, tonights dinner… nothing was turned on in this house. Thank you to my mom for introducing me to rubbing my leafy greens with avocado!

The simple, raw green salad is made with love, first and foremost. But here are the ingredients:

1 Whole Avocado

3 Cups of Spinach

1 Lemon

1 tbsp Raw Honey

Salt to taste

Start by cleaning your spinach and putting it in a bowl. Then cut the Avocado in half. Take 1 half and slice into small pieces. Take those pieces and rub them into the spinach. Mashing and spreading the avocado so it looks like a green sauce. Trust me, hands work best.

In a seperate bowl, whisk honey and lemon together. Once combined pour onto the spinach. Toss around and evenly coat all the leaves. Take the other half of avocado and dice into pieces and toss them into the salad. Give it one final mix, sprinkle a little salt and pepper. Viola! Salad is done…On to the smoothie.

Fruity Green Goodness:

Ingredients, All Organic ( Two servings):

2 Frozen Bananas

1/2 Cup Frozen Blueberries

1/2 Cup frozen Mango

1 Cup of Kale

1 tbsp Hemp Seeds

1 cup of Water

Blend together until desired texture. If you like it thicker, don’t use as much water and don’t blend as long. A liquid base will require more water and either a higher setting on your blender or spend more time blending.

Then dig in and enjoy!

Ahhh 2013… A Brand New Year

First off… Happy New Year to everyone! 2012 was an interesting one for me and I’m glad it is over. I try to look back over the last year and find the lessons and blessings in the long hard road. Still working on it and accepting them!

Although I don’t normally make resolutions, I have decided to start 2013 without a Facebook account. I am one, who believes change can come at anytime- not just because of a calendar date. But I wanted to start 2013 different… Day one is almost over and I feel great. I was starting to get hurt, annoyed and sensitive to it all. It seems in recent times, people won’t reach out or call but will say they read it on FB. Hmmm this bothered me… But so much more has happened and there were real emotions, lessons and pain. So much more than a status! I was tired of out of 400+ “friends” I only heard from say 30 of them max. For me- I need more interaction than a “like” on a picture. Lets really be friends… I will say its a great tool to contact people I’d lost touch with… But maybe some of those people were meant to be a part of the past? I believe everyone comes into our lives for a reason and some stay for a lifetime others for a chapter. Are we creating a whirlpool were everyone stays connected? To me, times change, people change and grow. Their life experience will form and mold them into a new character and maybe someone who I no longer connect with. So, I initiated my Facebook break. I disconnected my page before midnight on December 31st.

Through my cancer I felt the biggest connections through those who personally called, texted, and emailed. They didn’t care what my representative FB page stated they wanted to know how I truly felt. That was inspiring. It’s time to reconnect with people offline…. So I can email and text- but need to reach out and call or visit with those closest to me.

I will let you know how it goes further down the line. If I miss it or how I am doing on reaching out in real life to people I want still in my life.

Sunday Clean Eating Dinner- Amazing and easy!

As I try to fix mind, body & soul from my past toxins and cancer…I find myself being drawn to nutrition. I have been gluten and meat free for about 6 months now. It has been a journey. I still eat eggs and fish- my choice. My food journey is based on my needs and not a label.
Tonight’s kick ass dinner… Wild caught shrimp (uncooked) sautéed with carrot noodles, broccoli, ginger, and walnuts. Yum. We also had some organic Ludenburg Brown Rice. I started by putting some frozen organic broccoli in a pan with water… Just about a cm deep of water. I let that boil and defrost the broccoli. I took two carrots and peeled the skin. Then I used the peeler to make carrot noodles, by going the long way on the carrot. It makes a lot- but when they cook- it will shrink. I then threw them in with the broccoli- when the water had burned most of the way off. I then seasoned with Braggs Amino Acid sauce ( instead of soy sauce, I don’t eat soy) they I grated fresh ginger and added salt and pepper. The shrimp are next- thrown in and mixed into the goodness. Favor to your liking! Savor and enjoy.
